Goat Milk Ice Cream Recipe
For the best results, don’t substitute goat milk into any old ice cream recipe. Here is my favorite goat milk ice cream recipe, created especially for nutritious goat milk.
Vanilla Goat Milk Ice Cream
Vanilla Goat Milk Ice Cream Ingredients
2 cups goat milk
½ vanilla bean or 1 tablespoon of vanilla extract
4 egg yolks
⅓ cup honey
1 tablespoon of corn starch
Steps to Making Vanilla Goat Milk Ice Cream
- Using a blender, mix egg yolks, 1/2 cup of goat milk and corn starch till smooth
- Scrap vanilla bean seeds from the pod and add seeds an pod to the goat milk mixture (if you’re using vanilla extract wait to add it till the end).
- Add remaining goat milk and honey to a heavy bottomed saucepan and bring to a rolling boil for three minutes.
- Slowly pour the hot milk into the blender through the hole in the top while it is running. Do this slowly so you don’t scramble the eggs.
- When thoroughly mixed, pour the mixture back into the pan.
- Heat to 170 degrees, stirring constantly.
- Remove from heat. Remove the vanilla bean pod from mixture or stir in vanilla extract.
- Place mixture in a jar and chill to 40 degrees or less in the fridge or an ice bath.
- Churn the ice cream according to your machine’s instructions.
Extra Creamy Goat Milk Ice Cream
This recipe takes creaminess even further, by adding goat cheese to the list of goat milk ice cream ingredients. The recipe makes a rich chocolate ice cream, but the recipe can easily be modified to make any flavor you like.
Extra Creamy Goat Milk Ice Cream Ingredients
1 1/2 cups goat milk
2/3 cup sugar
5 ounces fresh goat cheese
6 egg yolks
4 ounces 70% dark chocolate
1 tsp of rum, almond extract, or vanilla
Steps to Making Extra Creamy Goat Milk Ice Cream
- Warm goat cheese to room temperature.
- Warm milk and sugar in a saucepan.
- Whisk together egg yolks.
- Add whisked egg yolks slowly to the milk and sugar mixture
- Heat the mixture to about 170 degrees, stirring constantly
- Remove from heat and add the goat cheese. If necessary you can blend the mixture in a blender.
- Melt the chocolate and add slowly.
- Place mixture in a jar and chill to 40 degrees or less in the fridge or an ice bath.
- Churn the ice cream according to your machine’s instructions.
